Actually a fruit seed, Buckwheat is an ideal grain for those with wheat allergies and gluten intolerance. 
It offers zinc, iron, niacin, protein, and the antioxidant rutin.  Preliminary studies find that comsuming buckwheat may be beneficial in the management of diabetes.
Buckwheat is a very versatile grain.  Mix equal portions of cooked buckwheat to batter for nutrient dense waffles, pancakes, or breads.  The morning's left-over buckwheat can be mixed with a saute of onions and preferred vegetables (wild mushrooms are our favorite) for an evening pilaf.
