With an origin dating back to 5,000 B.C., Spelt is a plump, firm grain with a nutty flavor and is more tastier and nutritious than its distant cousin, wheat.  It offers B and E vitamins, iron, and plenty of fiber as well as balanced protein in the form of 8 essential amino acids.  Due to it's high water solubility, spelt's nutritional components are easily assimilated by the body.
Use spelt in place of rice, stir into soups, make a pilaf, or create a bed of hearty stews.  Cook ahead of time, chill, and use cold in salads.  Batches may be frozen and stored for later us.
